Ingredients
  • 1 red pepper Deeseeded and cut into 1 inch squares
  • 1 green pepper Deseeded and cut into 1 inch squares
  • 1 yellow pepper Deseeded and cut into 1 inch squares
  • 2-3 courgettes Cut into 1cm slices
  • 24 cherry tomatoes
  • 24 button mushrooms
  • 1 red onion Cut into eigths and layers separated
  • 4 tbsp olive oil
  • 1 lemon Juiced
  • 2 cloves crushed garlic
  • 8 sprigs thyme leaves stripped and stalks discarded
Instructions
  1. Chop peppers, courgettes and red onion and place in a container with tomatoes and mushrooms.
  2. Mix oil, lemon juice, garlic and thyme leaves.
  3. Pour marinade over veggies and massage gently with your hands until everything is well coated.
  4. Cover and leave for 2 hours or overnight.
  5. Thread vegetables onto roughly 12 soaked wooden skewers
  6. Grill on the barbeque for around 15 minutes
