Vegetables skewered, marinated and barbequed are simple, colourful and surprisingly tasty.
Ingredients
- 1 red pepper Deeseeded and cut into 1 inch squares
- 1 green pepper Deseeded and cut into 1 inch squares
- 1 yellow pepper Deseeded and cut into 1 inch squares
- 2-3 courgettes Cut into 1cm slices
- 24 cherry tomatoes
- 24 button mushrooms
- 1 red onion Cut into eigths and layers separated
- 4 tbsp olive oil
- 1 lemon Juiced
- 2 cloves crushed garlic
- 8 sprigs thyme leaves stripped and stalks discarded
Instructions
- Chop peppers, courgettes and red onion and place in a container with tomatoes and mushrooms.
- Mix oil, lemon juice, garlic and thyme leaves.
- Pour marinade over veggies and massage gently with your hands until everything is well coated.
- Cover and leave for 2 hours or overnight.
- Thread vegetables onto roughly 12 soaked wooden skewers
- Grill on the barbeque for around 15 minutes
