A delicious alternative to meat for the vegetarian barbecue lover. Can be enjoyed fresh from the flame or as it cools throughout the evening when it flakes in the hand.

Ingredients
  • 1 tbsp lemon zest
  • 2 cloves crushed garlic
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 4 tbsp Water
  • 2 tbsp sunflower oil
  • 4 fillets salmon Approximately 500g total weight
Instructions
  1. Combine marinade ingredients
  2. Pour marinade over salmon fillets, cover and leave for 2 hours
  3. Barbeque for 10-15 minutes, depending on the heat of the barbeque and thickness of the fillets, until the flesh has just turned opaque
