Although a carbohydrate, new potatoes have a relatively low GI so a very good form for the potato lover to enjoy.
- 100 grammes new potatoes per person, cut into bite sized chunks
- Coating mayonnaise
- Pleanty chopped chives
- Boil the chunked new potatoes until cooked. Drain and set aside to cool.
- Add enough mayonnaise to coat the potatoes then sprinkle in the chopped chives and mix well.
